fun with lentils

I keep thinking about Neil from the Young Ones moaning about having to cook the lentils. Well, this isn't such a bad way to cook them. And this recipe is completely flatmate-free.

Put a 1-lb. bag of rinsed lentils into your crock pot and pour over 3 cups of chicken stock (go ahead and cheat and use bouillon if you wish) and add a few chopped carrots, 1 chopped onion, and a couple of stalks of celery, chopped. Stir in a clove or two of minced garlic, a couple teaspoons of ground cumin, and a little ground oregano. If you are not vegetarian and you want some extra protein, slice 1 lb. of a nice sausage (I used Portuguese linguica) and stir that in too. Simmer on low for 6 hours or on high for 3 hours. Bon appetit!

I'll have to try this! Lentils are great "hockey food" - high carbs, no fat - and they aren't really tasty on their own.

Omigodiforgot!

I think it will taste fine without, but I did blend in a little can (8 oz.) of plain tomato paste with the chicken broth. Think of it as an option.
